Harpawan who has a combined working experience of two and a half decades wherein his first stint of 14 years at ITC Hotels as the Executive Pastry Chef & Brand custodian of Pan India Bakery & Pastry of all ITC Hotels responsible for standardizing & implementation of high quality Bakery & Pastry products working with several EXPAT Pastry Chefs from all over the World during his tenure at ITC Sonar Kolkata . During that time, He was also nominated by IFCA to represent India as the Team Captain at the prestigious Asia Pastry Cup 2008 in Singapore competing against 12 Asian countries.
In 2014,he moved to the ITC Foods Business Division as Chef of Research & Development heading the innovation pipeline of the Chocolates & Biscuits/Cakes Category of ITC Foods designing and prototyping Premium & Luxury product profiles for the Division.
His Concept to market product portfolios include :
• “Fabelle”-The ITC Luxury range of pre-packaged chocolates exclusively available at the Fabelle Chocolate Lounges at ITC Luxury Collection Hotels pan India
• “Mom’s Magic-Gourmet Cookies” – A prepackaged range of Gourmet Cookies exclusively for exports developed under the ITC Sunfeast Brand available in 3 Variants in various countries.
Currently he is the Corporate Chef & Culinary Head of the ITC FoodTech business which has evolved from the New Business Development Cell of ITC and he is setting up various Fresh Food Service Oriented Businesses for ITC in the form of Multichannel kiosks (Airports, Corporate Tech Parks), Premium Cloud Kitchen brands (ITC MasterChef Creations, ITC Sunfeast Baked Creations, ITC Aashirvaad Soul Creations) churning out innovative product formats/concepts along with setting up & managing the complete Culinary Production Operations for ITC Foodtech Business pan India which is present across Bangalore, Chennai & Hyderabad leading an innovation pipeline churning out innovative products & product concepts which can be actualized to set up a fresh food service based business model which profitable and feasible/doable.He cultivates and maintain only the finest operation not only fulfilling basic requirements but also going above and beyond to provide exceptional experiences along with Implementing operational excellence in the fresh foodservices industry by optimizing processes to enhance efficiency, quality, and customer satisfaction.
