As Chief Operating Officer of EHV International, Nitin Mathur leads operations, business performance, and expansion across the group’s award-winning portfolio, including Indian Accent, Comorin, HOSA, Fireback, Chor Bizarre, and Drift. With over, 20 new restaurants due to open in 2026-2027, Mathur occupies one of the most consequential roles in Indian gastronomy today. Mathur’s career is rooted in the discipline of classical hotel & restaurant management. A graduate of IHM Pusa, New Delhi, one of India’s most rigorous hotel management institutions, he entered the industry at a time when the concept of ‘fine dining’ in India was still being written. Over 25 years, he built his expertise across operations management and people management, rising steadily through respected hospitality organisations. He joined Old World Hospitality Group in 2003 as a young Manager at Oriental Octopus. From there to multi-unit Manager at Habitat World, IHC to getting independent charge of Epicentre, Gurgaon to GM & VP Operations. And now as COO, where he has played a defining role in the group’s growth from a single acclaimed restaurant to a multi-city, multi-concept powerhouse. Old World Hospitality has transitioned into EHV International whose story is, in many ways, inseparable from his. Indian Accent, the group’s flagship, has been ranked amongst the world’s finest restaurant. Comorin, the group’s next concept celebrating regional Indian cuisine, earned its own place on the accolades list. As have Hosa and the other EHV International brands. His leadership extends well beyond numbers and rankings. When EHV expanded Indian Accent, Comorin & Fireback to Mumbai, one of the country’s most anticipated restaurant openings in recent years, it was Mathur who directed the operational framework, overseeing general managers and setting the standards that would carry the brand’s hard-won reputation into a new city. The same rigour shaped the launch of HOSA in Goa and thereafter, in Gurugram. The birth of a concept exploring the depth of South Indian cuisine, and Fireback an authentic Thai restaurant helmed by internationally celebrated chef David Thompson. Five restaurants are slated to open back to back in Hyderabad after which Jaipur and Bengaluru take shape. Today, EHV International stands at an inflection point. The group has announced plans to open more than two dozen new restaurants between 2026 and 2027, an expansion that would represent a transformation in scale for one of India’s most celebrated hospitality companies.
