Kshitij Behl is the Founder, Chef and Culinary Director of Echoes Café, a hospitality brand built around the belief that great food, meaningful experiences and inclusive hospitality can come together under one roof.
With over a decade of experience in the culinary and hospitality industry, Kshitij has played a key role in shaping Echoes’ culinary identity, from menu conceptualisation and recipe development to sourcing and food quality. Since its inception in 2015, Echoes has grown from a café in Satya Niketan, Delhi, into a recognised hospitality brand known for its distinctive dining experience and inclusive employment model.
As a chef, Kshitij is particularly interested in understanding the journey of food beyond the plate. His approach increasingly focuses on responsible sourcing, ingredient quality and closer connections with producers. Echoes currently sources a significant portion of its produce through its own farm initiative, which helps meet approximately 70–75% of its produce requirements. The brand has also developed an in-house mushroom growing facility producing oyster, shiitake and button mushrooms for its outlets.
Kshitij also advocates for greater awareness around responsible food sourcing, sustainability, food safety and evolving consumer preferences. Through his work, he continues to explore how restaurants can create food experiences that are not only delicious, but also more thoughtful and responsible.
